Krumkaker

Norwegian Wafers Without an Iron
Are you dreaming of traditional Norwegian Krumkaker but do not own the special waffle iron? I have great news for you! I love finding ways to make traditional recipes accessible, and I discovered that you can bake these incredibly crisp cardamom wafers directly on a standard baking sheet. It takes a bit of speed and patience, but the result is a beautifully delicate, golden pastry that tastes exactly like a traditional Norwegian Christmas.
Servings: 50 pieces
Course: Dessert
Cuisine: Norwegian

Ingredients

Krumkaker Batter
  • 3 pieces Eggs room temperature
  • 150 g Granulated sugar
  • 150 g Butter melted and lukewarm
  • 100 g Plain flour
  • 50 g Potato starch
  • 5 g Ground cardamom
  • 30-50 g Cold water for thinning the batter if needed

Method

  1. Whipping the Base: Place the eggs and granulated sugar into a mixing bowl. Whisk them thoroughly for about 5 minutes until you achieve a thick, pale foam.
  2. Mixing the Batter: Carefully fold the lukewarm melted butter into the egg foam. Next, sift the plain flour, potato starch, and ground cardamom together. Gently fold these dry ingredients into the wet mixture until a smooth batter forms.
  3. Resting and Thinning: Let the batter rest for 15 minutes. This allows the flour and starch to hydrate properly. After resting, check the consistency and whisk in the cold water as needed. You are looking for a batter that is pliable and liquid enough to spread very thinly.
  4. Preparing the Baking Sheet: Preheat your oven to 190–200 °C. Take a sheet of parchment paper and draw 2 to 3 circles (10 to 12 cm in diameter) on the back. Place the paper on your baking sheet with the ink facing down so it does not touch the food.
  5. Spreading and Baking: Place exactly 1 teaspoon of batter into the center of each drawn circle. Spread it out into a very thin, even layer. Bake a maximum of 2 to 3 pieces at a time for about 4 to 6 minutes, until they are golden brown.
  6. Quick Shaping: You must work quickly while the pastry is hot! Immediately lift the hot wafers off the baking sheet using a spatula. Roll them tightly around a cone mold, or drape them over the bottom of an inverted glass to form elegant dessert bowls. Hold the shape firmly for 5 to 10 seconds until the pastry cools and sets completely.
  7. Storage: Once the Krumkaker have cooled to room temperature, store them in an airtight metal tin to preserve their perfect crispness.

Notes

Baking Chemistry Fact:
Have you ever wondered why we use a mix of plain flour and potato starch for this batter? Potato starch lacks gluten. By replacing a portion of the wheat flour with starch, we significantly lower the overall gluten development in the batter. This is the absolute key to achieving a wafer that is shatteringly crisp and delicate, rather than tough or chewy!
