Savory Pork Crackling Buns

The Peasant History of Pork Cracklings:
Pork cracklings (škvarky) have been a treasured ingredient in Central European rustic kitchens for centuries. Before modern refrigeration, the traditional pig slaughter was a vital pre-winter event to ensure farming families had enough calories to survive. Rendering lard provided essential cooking fat for the whole year, and the crispy by-products left in the pot—the cracklings—were far too precious to waste. They were folded into simple bread doughs to create a hearty, flavor-packed meal that sustained hard-working farmers in the fields. Today, we elevate this rustic ingredient with modern techniques like baking with steam!

Ingredients

Preferment (Omládek)
  • 4 g fresh yeast
  • 60 g water lukewarm, ~28–30°C
  • 85 g fine wheat flour
Main Dough
  • 100 g water room temperature
  • 220 g fine wheat flour
  • 35 g whole grain wheat flour
  • 30 g granulated sugar
Fats, Seasoning & Cracklings
  • 1 tsp caraway seeds whole or coarsely crushed
  • 7 g fine sea salt
  • 1 tbsp fresh herbs parsley, rosemary, or marjoram - finely chopped
  • 40 g unsalted butter cold, cut into small cubes
  • 40 g pork lard cold, cut into small cubes
  • 80 g pork cracklings škvarky - finely chopped
  • 30 g butter melted, for brushing

Method

  1. Prepare & Ferment the Omládek: Dissolve 4g fresh yeast in 60g lukewarm water. Add 85g fine wheat flour and stir into a firm preferment paste. Cover with a damp cloth and let ferment at room temperature for 45 to 60 minutes until fully expanded and bubbly.
  2. Initial Dough Mixing: To the fermented omládek, add 100g water, 220g fine wheat flour, 35g whole grain wheat flour, 30g sugar.. Knead on low speed or by hand for 3–4 minutes until hydrated and a cohesive dough forms.
  3. Incorporate Salt, Herbs & Cold Fats: Add 7g sea salt, 1 tbsp fresh herbs, 40g cold cubed butter, and 40g cold cubed lard. Knead patiently until the fats, salt, herbs and caraway seeds are fully emulsified into the dough and it peels cleanly away from the sides of the bowl. Do not add extra flour.
  4. Gently Fold in the Cracklings: Add 80g finely chopped pork cracklings and gently fold them into the dough on low speed or by hand just until evenly distributed. Do not over-knead to protect the gluten structure.
  5. Bulk Fermentation: Shape the dough into a smooth ball, place in a lightly oiled bowl, cover, and let rise at room temperature for 60 to 90 minutes, or until doubled in size.
  6. Dividing & Shaping: Turn the dough onto a clean surface. Divide into 19 to 20 equal pieces (approx. 40g each). Roll each piece into a tight, smooth ball.
  7. Pan Assembly & Proofing: Thoroughly brush the sides of each dough ball with melted butter. Arrange side-by-side in a baking pan lined with parchment paper or brushed with lard. Cover loosely and proof for 20–30 minutes while preheating your oven to 200°C (390°F) with a steam pan at the bottom.
  8. Steamed Baking: Place the pan in the oven, pour 100ml hot water into the bottom steam pan, and bake at 200°C for 10 minutes for maximum oven spring. Remove the steam pan, lower the temperature to 180°C (355°F), and bake for an additional 15 minutes until golden brown.
  9. Final Touch: Immediately upon removing the buns from the oven, brush the tops generously with melted butter. Allow to cool slightly before pulling apart and serving warm.

Notes

Why a Firmer Omládek Needs 45–60 Minutes: With a ratio of 85g flour to 60g water, this preferment is stiffer than standard sponges. A longer 45–60 minute fermentation allows yeast cells and enzymes to thoroughly hydrate the flour and break down starches into complex sugars, creating an extraordinarily rich fermentation aroma and superior crumb elasticity.
Emulsifying Cold Fats, Salt & Herbs First: Incorporating cold cubed butter, cold lard, sea salt, and herbs together after initial gluten formation creates a smooth, silky emulsion. Salt stabilizes gluten bonds, while the dual cold fats coat the flour protein sheets without destroying dough strength.
Gentle Crackling Incorporation & Steam Baking: Pork cracklings (škvarky) contain sharp edges that can slice delicate gluten strands if over-kneaded. Folding them in gently at the very end preserves dough structure. Baking with initial steam for 10 minutes at 200°C ensures maximum oven spring before finishing at 180°C.
