Welcome to the autumn magic of Norwegian desserts! 🍎✨ Tilslørte bondepiker (Veiled Peasant Girls) is traditionally served in tall individual glasses, but this modern twist transforms it into a beautiful, sliceable dessert layered in a single pan.
By swapping the traditional heavy whipping cream for a lighter, protein-packed skyr mixture, the dessert gains a refreshing tang that perfectly balances the sweet cinnamon apple puree. The secret to making it sliceable lies in a heavily buttered base crust that holds everything together.

Ingredients
Method
- Prepare the Crispy Layers: Melt the butter in a pan, add the breadcrumbs (or oats mixture), sugar, and cinnamon. Toast over medium heat until golden and fragrant. Let it cool slightly.
- Form the Base (50% of the crumbs): Take slightly more than half of the warm toasted crumb mixture and pour it into the bottom of a 17 cm springform pan. Press it down firmly and evenly using the bottom of a glass. Place the pan in the fridge for 20 minutes to let the butter harden and stabilize the base.
- Cook the Apple Puree: In a saucepan, combine the grated apples, water (or butter), sugar, lemon juice, and vanilla. Cook gently until the apples soften into a thick puree with minimal excess liquid. Let it cool completely.
- Whip the Skyr Cream: In a mixing bowl, whip the heavy cream with the vanilla sugar until soft peaks form. Gently fold in the skyr until the mixture is smooth, light, and airy.
- Assemble the First Layers: Remove the chilled pan from the fridge. Spread half of the cooled apple puree evenly over the firm crumb base. Then, carefully spread half of the skyr cream over the puree.
- Add the Middle Layer (35% of the crumbs): Lightly and evenly sprinkle the next 35% of the crumb mixture over the cream. Do not press down with a glass; simply level it gently with a spoon so the cream underneath is not crushed.
- Assemble the Final Layers: Carefully spread the remaining half of the apple puree over the middle crumb layer, followed by the remaining skyr cream. Smooth the top beautifully.
- The Finishing Touch (15% of the crumbs): Lightly dust the top with the remaining 15% of the crispy crumb mixture for decoration. Chill the dessert thoroughly before slicing and serving. 🍎✨
Notes
Why is chilling the bottom layer so crucial for this specific pan version? The science lies in the thermodynamics of butter! The extra butter mixed into the breadcrumbs acts as a structural binder. When placed in the fridge, the melted butter solidifies, locking the loose crumbs into a solid, sliceable crust (very similar to a cheesecake base). This prevents the heavy, moist layers of apple puree and skyr cream from seeping through and turning the bottom into a soggy mess. A Note on the Middle Layer:
Do not worry about the middle crumb layer getting slightly soft. It will naturally absorb a bit of moisture from the cream and puree, giving it a pleasant, cake-like texture while still maintaining its structural integrity!
