The Tradition Behind Authentic Czech Honza Buns
Experience a true taste of Central European baking heritage with authentic Honzovy Buchty. These pull-apart buns are golden brown on the outside, incredibly soft on the inside, and filled with delicious traditional fillings. The secret to their cloud-like texture is the use of a classic omládek (preferment), ensuring they stay perfectly fresh, much like fusion Mandelboller.

Czech Honza Buns (Honzovy Buchty)
In classic Czech fairy tales, a character named Hloupý Honza (Simple Honza) is a staple. Whenever Honza left his cozy home to journey into the world to gain experience and seek his fortune, his mother would always pack him a bundle of these sweet, filled buns tied in a cloth. Today, we are bringing that exact fairytale magic into your kitchen!
Ingredients
Method
- Preparing the Fillings: Poppy Seed: Bring the milk to a boil. Pour in the ground poppy seeds, boil briefly to soften, and then stir in the sugar, cinnamon, and sour jam. Let it cool completely. Quark: Simply mix the block quark, powdered sugar, and egg yolks together until smooth. Plum Jam: Use a high-quality, thick plum jam. If your jam is too runny, you can easily thicken it by mixing in some ground biscuits.
- Creating the Omládek (Preferment): Always combine the milk with the yeast first, and only then add the flour. Let the mixture rest and rise until it doubles in volume and distinct bubbles form on the surface (about 30 to 45 minutes).
- Mixing the Main Dough: Combine your bubbly omládek with the remaining flour, milk, yogurt, sugar, and egg yolks. Mix these ingredients thoroughly. Remember our golden rule: any fat (the oil) and the salt must be incorporated into the dough only after the initial ingredients are beautifully combined.
- Kneading with Patience: Knead the dough until it is completely smooth and naturally pulls away from the sides of your bowl. Patience is essential; do not add extra flour right away, just let the gluten develop.
- The Main Fermentation: Cover your dough and let it rise until it doubles in volume (typically 1 to 1.5 hours, but look for volume increase).
- Dividing and Shaping: Turn the dough out and divide it into exact 35g pieces. Flatten each piece and place exactly 30g of your chosen filling in the center. Carefully pinch the edges completely shut so the filling cannot escape.
- Preparing for the Oven: Place the shaped buns into a baking dish. Generously brush the sides of each bun with melted butter before placing the next one right next to it. Do not brush the tops with egg wash! The hot steam in the oven would turn an egg wash into a dull, matte finish.
- Baking with Steam: Preheat your oven to 200°C and prepare for steam baking (zápara). Bake the buns with steam for 10 minutes. Then, remove the steam source, lower the temperature to 160°C, and bake for another 20 minutes until perfectly golden.
- The Final Touch of Magic: Immediately after pulling the hot buns from the oven, brush the tops generously with a mixture of melted butter and a splash of rum.
Notes
Baking Tips for Success:
- Precision Matters: Divide the dough into exact 35g pieces and use 30g of filling for the ideal ratio.
- No Egg Wash with Steam: Do not brush the tops with egg wash before baking. We use steam baking, and hot steam would turn an egg wash into a dull, matte finish.
- The Butter Barrier: Generously brush the sides of each bun with melted butter before placing the next one right next to it so they pull apart easily after baking.
- Post-Bake Glaze: Brush the hot buns with melted butter mixed with a splash of rum immediately after taking them out of the oven.
