Why You’ll Fall in Love with Traditional Skolebrød
Are you ready to bake the ultimate Norwegian treat? Authentic Skolebrød (also known as school bread) are fluffy cardamom buns filled with rich vanilla custard and dipped in sweet coconut. By combining this Scandinavian classic with a traditional Czech omládek (preferment), you get an incredibly soft dough that stays fresh for days. Grab some cardamom and let’s start baking!
Skolebrød
Fluffy Norwegian cardamom buns filled with rich vanilla custard, glazed, and coated in sweet coconut, elevated with a traditional Czech omládek preferment.
Ingredients
Method
- Vanilla Custard: Whisk the cornstarch and egg yolk into a small splash of cold milk until completely smooth and lump-free. In a saucepan, heat the remaining milk with the sugar and vanilla. Pour in the cornstarch mixture and cook over medium heat, stirring constantly. As soon as the custard thickens, immediately remove it from the heat. Press plastic wrap directly onto the hot custard surface to prevent a skin from forming, and let it cool completely.
- Preferment: Stir together 100 g lukewarm milk, 10 g fresh yeast, and 120 g fine wheat flour in a bowl. Cover and ferment at room temperature for about 45 minutes until doubled and bubbly.
- Main Dough: Add the remaining milk (150 g), sugar, egg, flour (380 g), and ground cardamom to the risen preferment. Begin kneading. Once combined, incorporate the salt, softened butter, and oil. Knead until smooth and elastic. Cover and let rise in a warm spot for 60–90 minutes, or until doubled in size.
- Shaping and Filling: Divide the risen dough into 12 to 15 pieces (approx. 60 g each). Roll into tight, smooth balls, place on a baking sheet lined with parchment paper, cover, and let proof again. Gently press a deep indentation into the center of each proofed bun (using the bottom of a small glass or your fingers) and fill generously with the cooled vanilla custard.
- Baking: Bake at 200 °C (390 °F). Use steam for the first 5 minutes to help the buns expand to maximum height, then vent the steam and bake for another 5–7 minutes without steam until golden brown. Allow the buns to cool completely on a wire rack.
- Glazing & Decorating: Stir together the powdered sugar (100 g) and milk (20 g) into a thick, smooth glaze. Brush the top surface around the custard center with glaze, then immediately dip into shredded coconut.
Notes
History & Baking Science:
Why “School Bread”?: Skolebrød dates back to 1950s Norway, where these sweet treats were baked as a special addition to children’s school lunchboxes (matpakke). Originally sold at school fairs, they quickly became a staple in every Norwegian bakery.
The Magic of Starch Gelatinization: The vanilla custard relies on cornstarch for structure. As you heat the liquid to 70–80 °C, the starch granules absorb milk and swell. They eventually burst, releasing amylose chains that form a firm 3D gel matrix. The egg yolk acts as an emulsifier (thanks to lecithin) to keep the texture velvety smooth.
Preventing Retrogradation: Covering the hot custard immediately with plastic wrap directly on its surface stops moisture from evaporating. This prevents starch retrogradation, saving you from that dreaded rubbery skin on top.
