The Sourdough Series (Part 3): Fast & Universal Liquid Wheat Starter (Li.co.li)

Welcome to the final installment of our sourdough conversion series! 🥖✨

We have built a master rye starter and transformed it into stiff Lievito Madre. Now, let’s explore the most practical, user-friendly culture for everyday artisan baking: Li.co.li (Lievito in coltura liquida), the ultimate liquid wheat starter.

If you love crisp baguettes, open-crumb ciabatta, or airy focaccia, this is the starter you will want on your counter every day!

The History of the Liquid Wheat Starter in Modern Italy

While Lievito Madre represents centuries-old pastry traditions, Li.co.li is a product of modern baking evolution. As artisan bakeries and pizzerias scaled up in 20th-century Italy, daily hand-kneading and binding of stiff pasta madre became labor-intensive.

Italian bakers refined a 100% hydration liquid culture that provided all the complex fermentation benefits of natural wild yeast without requiring physical kneading during maintenance feedings. It quickly became the modern gold standard for high-hydration rustic baking.

The Science: Enzymatic Mobility, Gas Production, and Open Crumb

Your liquid wheat starter is maintained at 100% hydration—meaning equal weights of flour and water (1 : 1 : 1 ratio).

The high water content creates distinct biochemical dynamics:

  • Enzymatic Mobility: In a liquid batter consistency, enzymes (amylases and proteases) and microbial cells move with extreme speed. This leads to rapid breakdown of simple starches into fermentable sugars, producing fast gas production and visible, large bubbles.
  • Crumb Structure & Acidity: High water activity (aw) favors balanced microbial activity, producing mild acetic and lactic acids that yield a bright, pleasant “chlebová” (bread-like) tang. Because the batter offers little mechanical resistance, CO2 expands freely, setting up the dough for an open, airy crumb (alveolatura).

Step-by-Step Conversion: From Rye to a Liquid Wheat Starter

Converting rye starter to Li.co.li is significantly faster and easier than Lievito Madre—it takes just 2 to 3 days and requires only a spoon to mix!

You can use standard wheat bread flour (like T650) or smooth unbleached strong wheat flour.

Step 1

Hydration Adjustment

Mix: 20 g Rye Starter + 50 g Water + 50 g Wheat Flour
Hydration Level: 100%

Combine active rye starter with equal parts warm water and unbleached bread flour. Whisk with a spoon until a smooth, batter-like consistency is achieved.

Cover loosely and rest at room temperature (21–24 °C) for 6 to 8 hours until doubled and full of large bubbles.

Step 2

High-Frequency Refreshes

Ratio: 1 : 1 : 1 (e.g. 30 g : 30 g : 30 g)
Target Peak: 3–4 hours at 26°C

Feed daily at 1:1:1. By day 3, the rye component is essentially gone. Because of the liquid environment, enzymatic activity is high and yeasts multiply rapidly, reaching peak activity faster than stiff starters.

Step 3

Peak Refreshment & Cold Storage

Maintenance Ratio: 1 : 2 : 2 or 1 : 3 : 3

When storing in the fridge, feed with a higher ratio (e.g. 10 g starter + 30 g water + 30 g flour). This extends metabolism so it stays fresh for up to 7–10 days without feeding.

💡 Baker’s Advantage: Li.co.li requires no kneading—just a quick stir in a jar with a spoon!

Whether you choose Lievito Madre for sweet weekend baking or your new liquid wheat starter for daily bread, understanding your starter’s chemistry gives you complete control over your baking magic!

Starter Comparison Matrix

Property Liquid Starter (Li.co.li) Stiff Starter (Lievito Madre)
Hydration Level 100% (equal flour & water) 40–50% (half water relative to flour)
Consistency Batter-like, liquid Stiff dough, rollable
Maintenance Labor Very low (stir with a spoon) Higher (kneading required)
Flavor Profile Pleasant, crisp bread notes Very mild, sweet, lacto-yogurt notes
Best Uses Daily bread, baguettes, focaccia, ciabatta Panettone, brioche, viennoiserie, rich sweet doughs

Mother Starter Maintenance Calculator

Calculate the feeding ratio for your master "Mother Starter". Once this mixture ferments and peaks, you will use a small portion of it as the Seed Starter for your recipe, and store the rest for your next bake.
